White Cheshire cheese with grapesCheshire cheese predates all other English cheese and its heritage stretches back to Roman times.  Its fame was sealed forever with a mention in the Doomsday Book a thousand years later.

During the 16th century, it was reputed to be the best cheese in Europe and was a firm favorite at the court of Elizabeth I.  By the late 19th century, cheesemaking in Cheshire was prolific and local fairs in Whitchurch, Nantwich and Chester were the centres for trading. Whitchurch was the largest fair of them all it had been instituted in 1899 but was discontinued during the First World War.

The biggest weight offered for sale in any one day was an incredible 265 tons of Cheshire cheese at the annual Dairy Show and Fair, held in November. This represented a fine show of approximately 10,000 cheeses.

Cheshire cheese has a mild, milky & slightly salty taste and a distinctively crumbly yet silky & moist texture.  Having produced the cheese for over 50 years since origination, Joseph Heler Limited are proud to support their local cheese.

Wensleydale

Wensleydale cheese on a cheese boardWensleydale is an ancient British territorial cheese that, according to local tradition, dates back to 1066 when it was originally made at Jervis Abbey in Yorkshire by the monks who came to England with William the Conquerer.

Wensleydale is creamy white in colour with a slightly flaky texture.  Mild in flavour, the cheese also has a honeyed aftertaste.

Caerphilly

Two triangles of Caerphilly cheeseThis cheese was first made in the village of Caerphilly near Cardiff in Wales during the early 1900’s.  Welsh miners took the cheese down the pits with them, not only to eat but also to rub into wounds to prevent infection and aid healing.  It also provided salt replenishment, lost through hard work.

Caerphilly has a moist, smooth yet crumbly texture.  The cheese delivers a fresh, tangy buttermilk flavour and is slightly salty.

Lancashire

Lancashire cheese on a cheese crackerWith an open, moist & crumbly texture, Lancashire cheese is creamy white in colour and delivers a sharp, tangy flavour.

As the name suggests, Lancashire was originally made in Preston, Lancashire back in the 13th century by farmer’s wives.  It found fame in Robert Louis Stephenson’s book ‘Treasure Island’ and is now one of the country’s most loved cheese.

Red Leicester cheese with saladRed Leicester has an open, grainy texture with a mellow yet distinctive flavour with a hint of lemon.  Annatto, a natural plant extract, gives the cheese its characteristic russet-red colour.

Originally conceived and made in the East Midlands, where it was known simply as ‘Leicester’, the cheese was originally coloured using carrot or beetroot.  The cheese gained popularity between the two World Wars when its reputation spread throughout the country.

Blocks of Double GloucesterDouble Gloucester is a golden straw-coloured cheese with a smooth, mellow flavour & firm texture.  Coloured with annatto, a natural plant extract, the cheese gives a buttery & creamy mouth feel.

It is thought that Double Gloucester was named name in the 18th century due to the use of double-cream milk in its production.  It is now established as one of Britiain’s favourite cheese.

Cheddar Cheese

Cheddar cheese on a cheese boardCheddar cheese spans from light orange to golden yellow in colour.  With a firm texture, the cheese can range from sweet & mild to nutty and strong when mature.

Joseph Heler Cheese has been producing a wide range of Cheddar cheese for the last 20 years.  From Mild to Ultra Strength and all profiles in-between, the cheese is graded by our experts to allow as much flexibility as possible.

Although known for capturing the flavours of the Somerset village of Cheddar, this is now one of the most widely made and frequently eaten cheese in the world.

As consumer tastes move to stronger flavoured cheese Joseph Heler have responded to this by releasing Original Reserve.

Original Reserve offers the consumer a mature regional cheese to cater for the modern palate, providing distinctive flavour profiles.

The new product range is the first mature regional cheese to be made at the creamery and is available in four varieties – White Cheshire, Red Leicester, Double Gloucester & Mature Cheddar.

Before the Original Reserve leaves the dairy final approval is gained from Joseph Heler himself, who hand grades all cheese made on site.

Original Reserve is a product to be enjoyed everyday and not just for special occasions.

Reduced Fat Regional Cheese

As well as offering our Reduced Fat cheese for Ingredients markets, the company is also investing in being able to provide Reduced Fat versions of our Red Leicester, Double Gloucester and White Cheshire for retail and wholesale markets.
