All of our cheese is made by hand in our traditional dairy, matured for the time needed to develop the distinctive flavours and textures, and specially selected only when they are ready by our expert cheese graders.
Typically matured for between 9-12 months, the cheese has a firm body with an open texture, delivering a rich, creamy flavour with sweet and savoury notes.

BLACKSTONE VINTAGE CHEDDAR
With a firm rugged texture Joseph Heler's flagship cheddar Blackstone has been typically aged for approximately 18 months. This produces a wonderfully robust cheddar with a full depth of flavour.
